Homemade Chili

Cook Time: 2 1/2 Hours

Ingredients:

1 Green Bell Pepper

1 Red Bell Pepper

1 White Onion

Two Cloves of Garlic

1 Jalapeño Pepper

1 Can of Red Kidney Beans

1 Can of Black Kidney Beans

1 Can of Tomato Sauce

1Lb of Ground Beef

1Lb of Ground Pork

2 Tablespoons of Chili Powder

2 Tablespoons of Cumin

1 Teaspoon of Salt

1 Teaspoon of Pepper

3 Tablespoons of Butter

1 Tablespoon of Olive Oil

1 Cup of Beef Stock

Block of Cheddar Cheese

Block of White Cheddar

Instructions

  1. Chop the jalapeño and place in frying pan on the stove

  2. Sauté in olive oil the jalapeño until it softens then place to the side

  3. Chop the bell peppers, onion, garlic cloves and place in a large pot on the stove with the butter

  4. Sauté the peppers, onion and garlic for 2 minutes on medium heat. Add jalapeño and turn the heat off once everything fully softens or onions start to look translucent

  5. Place everything on a plate and put to the side

  6. Take the ground beef and pork placing it in the large pot, salt and peppering it

  7. Cook the meat till brown and add everything from the plate back in the pot.

  8. Add both cans of kidney beans, the can of tomato sauce and beef stock in the pot

  9. Add the rest of the seasoning. Taste test to check if more seasoning(chili powder/cumin) is needed. Add according to taste but make sure to keep tasting as you add to not over season(be careful everyones spice tolerance is different)

  10. Turn the heat on medium to high to bring the pot to a boil stirring the chili as it heats up

  11. Once boiling turn on low heat stirring occasionally for next two hours

  12. To serve shred the cheese and sprinkle on top

  13. Enjoy!
